Classic Summer Oats

You’ve probably already seen the multitude of delicious, warm oatmeal recipes on this blog. But what about a cool and refreshing oatmeal to enjoy when it’s sweltering hot outside? This recipe is just what you need to start off a summer’s day! When I first made this recipe, I was so surprised and excited by how delicious it turned out! The sweetness and thickness of the oats is unbelievable! It tastes like a cold dessert!

Classic Summer (Overnight) Oats

Dairy-free, refined sugar-free, oil-free, gluten-free, soy-free

Yield: approx. 3 cups (2 servings)

Prep Time: 5 min

Fridge Time: 6-8 hours


Ingredients:

  • 1 cup old-fashioned rolled oats

  • 1 ¾ cup plant milk (I used cashew milk)

  • 1 tablespoon chia seeds

  • 1 tablespoon ground flax seeds

  • ½ teaspoon ground cinnamon

  • 2 tablespoons date or maple syrup

  • 1 teaspoon vanilla extract

  • cup fresh blueberries

  • 1 tablespoon pumpkin seeds

  • 2 tablespoons goji berries

  • 2 tablespoons mulberries

Directions:

  1. Combine all the ingredients in a medium to large-sized bowl and stir to mix.

  2. Spoon into small mason jars with tight-fitting lids or small bowls and cover tightly.

  3. Refrigerate overnight to allow the oats to thicken and the flavors to infuse.

  4. Enjoy in the morning!
