Ratatouille

It's always been a massive dream of mine to recreate dishes from the movies of my childhood. Especially Ratatouille! Here's my rendition of this iconic dish from the iconic Pixar movie.

Ratatouille

Yield: 6 servings

Prep Time: 15 mins

Cook Time: 15 mins

Bake Time: 1hr

Total Time: 1.5 hrs


Ingredients:


Veggies -

  • 2 eggplants

  • 1 zucchini

  • 1 yellow squash

  • 4 roma tomatoes

Sauce -

  • 2 tbsp olive oil

  • 1 onion, diced

  • 4 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • salt & pepper, to taste

  • 15 oz can of crushed tomatoes

  • 2 tbsp chopped fresh basil, 8-10 leaves

Herb Seasoning -

  • 2 tbsp chopped fresh basil, 8-10 leaves

  • 1/2 tsp garlic powder

  • 2 tbsp chopped fresh parsley

  • 2 teaspoons fresh thyme

  • salt & pepper, to taste

  • 4 tbsp olive oil


Directions:

  1. Preheat the oven to 375 F (190 C)

  2. Slice the eggplant, zucchini, yellow squash, and tomatoes into very thin rounds, then set aside (try to get them as thin as possible).

  3. To make the sauce, heat the olive oil in a saute pan. Saute the onion, garlic, and bell peppers until soft. Then, season with salt and pepper before adding the crushed tomatoes and basil. Stir well, then transfer to a blender. Blend for approximately five minutes to reach a well-incorporated, thick sauce texture.

  4. Evenly spread a thin layer of the sauce across the entire bottom of a baking pan (you may use the remaining sauce for plate decoration when serving).

  5. In the baking pan, arrange the veggie slices in alternating patterns in a circular pattern from the center of the pan to the outermost edge.

  6. Mix together the herb seasoning ingredients in a small bowl and spoon the seasoning over the vegetables.

  7. Cover the pan w/ foil and bake for 40 min, then uncover and bake for another 20 min.

  8. Enjoy!
