This recipe is a reimagination of scrambled eggs if it were plant-based and made from tofu! Tofu is another great protein source! You can also add veggies such as onions, garlic, bell pepper, kale, mushrooms, or broccoli to add extra nutrition value!

A 16-oz. block firm or extra-firm tofu
2 tablespoons nutritional yeast
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground turmeric
1 tablespoon unsweetened, unflavored coconut milk
Preheat a non-stick pan over medium heat. You can add a little bit of oil if you desire. Crumble the tofu block into the pan with your hands. Cook, stirring frequently, for 3-4 minutes until the water from the tofu is mostly gone.
Add in the nutritional yeast, garlic powder, salt, and ground turmeric. And cook for another 5 minutes, stirring constantly.
Pour the coconut milk into the pan and stir until well-combined. Remove from heat.
Enjoy with avocado, ketchup, hot sauce, toast, or any other breakfast foods!
